1 envelope active dry yeast (2 1/4 teaspoons)
3/4 cup warm water (110°-115°F)
2 1/2 cups flour
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 teaspoon salt
1 tablespoon olive oil
Dissolve yeast in water, letting sit 5 minutes or so till bubbly. Heat oven to 400°F. Spray baking sheets with nonstick cooking spray. Stir together flour, cheeses and seasonings. Stir oil into yeast mixture. Stir dry mixture into yeast mixture. Turn out onto lightly floured surface and knead 1 minute till dough comes together. Cover and let rest 5 minutes. Roll out to 16x10 inch rectangle. If making longer breadsticks (14), cut crosswise into 1/2 inch wide strips. If making shorter sticks (28), cut in half lengthwise then crosswise into 1/2 inch wide strips. Twist strips and place on prepared sheets. Bake 14-16 minutes till lightly browned. Brush with butter while warm.
