8 ounces softened cream cheese
4 ounces shredded Muenster cheese
4 ounces shredded white cheddar cheese
2 tablespoons finely chopped onion
2 tablespoons cherry flavored liqueur
1 cup pitted fresh or frozen (thawed and drained) dark sweet cherries
3/4 cup honey roasted sliced almonds (look for by salad dressings)
crackers or mini toasts
Process cheeses, onion and liqueur together till smooth and well mixed. Spoon into large bowl. Chop 3/4 cup cherries. Reserve remaining cherries and 2 tablespoons almonds. Stir chopped cherries and remaining almonds into cheese mixture till well mixed and mixture is pink. Line 3 cup bowl or mold with double layer of cheesecloth. Spoon mixture into mold. Cover and chill 1 hour but not longer than 24 hours. Unmold onto serving plate. Cut reserved cherries in half and use to garnish mold along with reserved almonds. Serve with crackers or mini toasts.
