Three Herb Devilled Eggs

Makes: 2 dozen

12 hard boiled eggs, peeled
1/4 cup mayonnaise or salad dressing
1/4 cup sour cream
2-3 tablespoons Dijon mustard
2 tablespoons fresh snipped parsley
2 tablespoons fresh snipped dill
OR
1 1/2 teaspoon dried dillweed
2 tablespoons fresh snipped chives
OR
1 1/2 teaspoon dried chives
salt
black pepper
paprika or cayenne, optional

Cut eggs in half and remove yolks. Mash yolks with fork. Add remaining ingredients and season to taste with salt and pepper. Gently stuff mixture back into egg halves. Sprinkle with paprika or cayenne.
