2 cups cooked Jasmine rice
2 eggs
1/2 cup grated Parmesan cheese
1 tablespoon chopped parsley
2 pounds ground beef
2 tablespoons olive oil
1 large chopped onion
1 small can tomato paste
salt & pepper to taste
5 ounces frozen peas
1 cup breadcrumbs
Mix cooked rice, eggs, Parmesan, & parsley. Set aside. Sauté ground beef with olive oil and chopped onion. Add tomato paste and salt & pepper. Stir in frozen peas. Chill. Place 1/4 cup rice mixture in palm of hand. Place 1 tablespoon meat mixture and cover with 1/4 cup of rice mixture. Shape into ball. Roll in breadcrumbs. Deep fry in oil until golden.
