Pumpkin Cheese Ball

Serves: 16

16 ounces extra sharp shredded cheddar cheese
8 ounces softened cream cheese
8 ounces chive and onion cream cheese
2 teaspoons paprika
1/2 teaspoon cayenne
1 broccoli stalk

Combine all but broccoli. Cover and chill 4 hours till firm enough to shape. Shape into ball to resemble a pumpkin. Cut broccoli stalk to resemble a stem and press into top of pumpkin. Serve with apple wedges. Make Ahead: Store in refrigerator up to 2 days without stalk attached.
