Cheddar Stuffed Mushrooms

Makes: 2 dozen

24 large fresh mushrooms, 2 inches in diameter, cleaned
1/4 cup sliced green onions
1 minced clove garlic
1/2 teaspoon Tabasco sauce
1/4 cup butter
2/3 cup dry bread crumbs
1/2 cup shredded cheddar cheese

Heat oven to 425°F. Remove stems from mushrooms and reserve caps. Chop stems to make 1 cup. Melt butter in large skillet. Cook and stir stems, onions, garlic and Tabasco in melted butter over medium-high heat till tender. Remove from heat. Stir in bread crumbs and cheese. Spoon mixture into caps. Place on 15x10 inch baking pan with sides. Bake 8-10 minutes till heated through.

I smoked these in the smoker while I was also doing a pork roast. They weren't bad. Probably took about 15 minutes.
