Basil Feta Cheese Triangles

1 pound crumbled feta cheese
1 slightly beaten eggs
1/4 teaspoon white pepper
1/4 cup finely chopped fresh basil (about 1 tablespoon dried)
16 ounces frozen phyllo dough, thawed
1/2 cup melted butter

Heat oven to 350°F. Stir together eggs, basil and white pepper. Cut stack of phyllo sheets lengthwise into thirds. Cover with waxed paper, then with a damp towel to prevent them from drying out. Brush one strip of phyllo with butter. Stack 3 strips in this manner, brushing with butter in between each. Place 1 heaping teaspoon of cheese mixture on one end of the phyllo strip. Fold the phyllo strip end over end, in a triangular shape, to the opposite end. Place on the cookie sheet and brush with butter. Repeat with remaining phyllo. Bake 15-20 minutes till puffed and golden. Serve warm.
