Chex Caramel Corn Mix

Makes: 9 1/2 cups

2 1/2 cups corn chex cereal
2 1/2 cups rice chex cereal
4 cups popped popcorn
1/2 cup cashew halves or honey roasted peanuts, optional
1/4 cup butter
6 tablespoons brown sugar
2 tablespoons light corn syrup
1/4 teaspoon vanilla extract

Heat oven to 250°F. Mix together cereal, popcorn and nuts on large rimmed baking sheet. Divide between 2 sheets if necessary; mixture should not be heaped too thick. Heat butter, sugar, corn syrup and vanilla together in microwave on high for 2 minutes, stirring after 1 minute, till mixture is boiling. Pour over cereal mixture and stir till evenly coated. Bake 45 minutes, stirring every 15 minutes. Spread onto waxed paper to cool, stirring occasionally to break up. Cereal mixture can be mixed in a large bowl and sugar mixture poured over in the bowl, stirred to coat evenly and then poured into baking sheets.
