Ground Turkey Skewers

Serves: 24

24 wooden skewers (8 inches long)
1 1/4 pound ground turkey
1/4 cup finely chopped pecans
1/4 cup finely chopped onion
1 teaspoon cumin
2 minced cloves garlic
1 teaspoon fresh chopped thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
apricot preserves, optional

Soak skewers in water 30 minutes to prevent burning. Heat oven to 375°F. Line 15x10 inch jelly roll pan with foil. Spray with nonstick cooking spray. Mix all ingredients together. Shape rounded tablespoonfuls of mixture around top third of each skewer. Place skewers in pan with turkey in center of pan and skewers to outside of pan. Bake 20-25 minutes till turkey is no longer pink in center. Just before serving, brush with apricot preserves.
