Roasted Garlic & Spinach Spirals

1 head garlic
3 cups fresh spinach
15 ounces white beans, rinsed and drained
1 teaspoon oregano
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper
7 flour tortillas (7 inch)

Heat oven to 400°F. Cut tops of garlic heads to expose cloves. Place in small baking pan and bake 45 minutes till very tender. Remove from pan and cool completely. Squeeze garlic into small bowl. Rinse spinach and pat dry with paper towels. Remove stems. Finely shred spinach. In food processor, process garlic, beans, oregano and peppers together till smooth. Add spinach and mix well. Spread evenly onto tortillas. Roll up tightly. Cover and chill 1-2 hours. Cut rolls into 1 inch pieces.
