Beef Fried Rice

3/4 pound very lean ground beef
6 chopped green onions
3 large ribs celery, chopped
8 ounces bean sprouts
1/2 cup sliced fresh mushrooms
1/2 cup finely chopped red bell pepper
1 teaspoon fresh grated ginger
3 cups cooked rice
2 tablespoons soy sauce
salt and black pepper

Brown beef and drain. Stir in onion, celery, sprouts, mushrooms, pepper and ginger. Cook over medium-high heat 5 minutes till vegetables are crisp-tender, stirring frequently. Stir in rice and soy. Season with salt and pepper to taste. Heat through, stirring occasionally.
