Meatballs
Prep Time: 25 minutes
Serves: 4-6

1 slightly beaten egg
3/4 cup soft bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
2 tablespoons fresh snipped parsley
1-2 minced cloves garlic
1 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound lean ground beef

Heat oven to 350°F. Combine all ingredients and mix well. Shape into 1 1/2 inch diameter balls. Place in 15x10 inch baking pan. Bake 15-20 minutes till no pink remains. Drain off fat.

These can be cooked in skillet instead of oven. Cook half the meatballs at a time in a large skillet in 1 tablespoon melted butter over medium heat for 10 minutes till no pink remains, turning to brown evenly.
