3 packages (16 ounce) frozen unsweeetened strawberries
1 cup sugar
3/4 cup honey
1/2 cup water
1 tablespoon finely shredded lemon peel
1/2 cup lemon juice
1/2 cup fresh sage leaves
OR
2 tablespoons dried sage, crushed
4-6 cups ice cubes
2 bottles club soda (1 liter bottles)
OR
2 bottles champagne (750mL bottles)

In large Dutch oven, combine first 6 ingredients. Cook uncovered over medium heat till mixture boils, stirring frequently. Remove from heat and stir in sage. Let stand uncovered 1 hour. Press mixture through a fine mesh sieve and discard solids. This should yield 4-5 cups syrup. Can cover and refrigerate up to 3 days. Combine syrup and ice cubes and slowly add champagne or club soda. Garnish with berries and sage leaves if desired.
