3 tablespoons olive oil
2 finely chopped cloves garlic
5-5 1/2 cups bread flour
2 tablespoons sugar
1 1/2 teaspoons salt
2 packages active dry yeast (4 1/2 teaspoons)
2 cups warm water (120°-130°F)
3/4 cup shredded Asiago cheese
Heat oil in small skillet over medium heat. Cook and stir garlic in oil till just beginning to brown. Mix together 2 cups flour, sugar, salt and yeast. Beat in water and garlic mixture 3 minutes on medium speed. Stir in cheese and enough remaining flour to make dough easy to handle. Turn out onto lightly floured surface. Knead 5-10 minutes till smooth and springy. Place in large greased bowl, turning to coat. Cover loosely with plastic wrap and let rise 1-1 1/2 hours till double. Grease baking sheet. Divide dough into fourths. Shape each into 6 inch round. Place smooth sides up on prepared sheet. Cut 1/2 inch deep slash in top of each round with serrated knife. Cover loosely with plastic wrap and let rise 30 minutes till double. Heat oven to 375°F. Bake breads 20-25 minutes till golden brown.
