English Muffin Toasting Bread

Makes: 1 loaf

cornmeal
1 cup milk
1/4 cup water
1 tablespoon butter
3 cups bread flour
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon baking soda
1 package active dry yeast (2 1/4 teaspoons)
melted butter

Grease bottom and sides of 8x4 inch loaf pan. Sprinkle with cornmeal. Heat milk, water and butter till very warm (120-130F). Mix together 1 1/2 cups flour, sugar, salt, baking soda and yeast. Stir in milk mixture. Beat on low speed 1 minute, scraping bowl frequently. Stir in remaining flour. Pat evenly into prepared pan with floured fingers. Cover loosely with plastic wrap sprayed with nonstick cooking spray. Let rise in warm place 40-60 minutes. Dough is ready if indentation remains when touched. Heat oven to 400F. Bake 22-27 minutes till golden brown. Remove from pan to rack. Brush top with melted butter for a softer loaf. Cool completely.
