Cumin Cornbread

1 cup wheat or all-purpose flour
1 cup cornmeal
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon cumin
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon crushed red pepper
1 tablespoon butter
2 beaten eggs
1 cup milk
1/4 cup melted butter

Heat oven to 400°F. Mix dry ingredients together. Add butter to 10 inch cast iron skillet or 9 inch baking pan. Place pan in oven 3 minutes till butter melts. Remove skillet from oven and swirl butter to coat bottom and sides. Stir together eggs, milk and butter. Add egg mixture all at once to dry mixture. Stir just till moistened. Pour batter into hot skillet and bake 15 minutes till toothpick inserted near center comes out clean.
