Orange Honey Yogurt Sauce
8 ounces vanilla yogurt
1 tablespoon honey
1/4 teaspoon grated orange peel
1/4 teaspoon vanilla extract
Mint Tarragon Syrup
1/4 cup mint jelly
1/2 teaspoon fresh tarragon
1/2 of a medium pineapple, peeled, cored, thinly sliced
1/2 of a small cantaloupe, peeled, seeded, cut into bite sized pieces
2 red grapefruits, peeled, seeded and sectioned or sliced crosswise
1 papaya, halved, seeded, peeled and sliced lengthwise
Garnish
6-8 fresh strawberries, halved
6-8 fresh mint sprigs
Orange Honey Yogurt Sauce
Combine all ingredients. Cover and chill at least 30 minutes.
Mint Tarragon Syrup
In saucepan, heat jelly and tarragon together, stirring till jelly melts. Cool slightly and strain to remove tarragon leaves.
Arrange fruit in serving dishes. Drizzle lightly with Mint Tarragon Syrup. Garnish with strawberries and mint sprigs. Pass Orange Honey Yogurt Sauce with fruit.
