Baked Butter Pecan French Toast

Serves: 8

1 cup brown sugar
1/2 cup butter
2 tablespoons honey
1 cup chopped, toasted pecans
1 pound loaf French bread, cut into 1/2 inch thick slices
2 cups finely chopped ham
6 beaten eggs
1 2/3 cups milk
1 teaspoon vanilla extract
1 tablespoon sugar
1 teaspoon pumpkin pie spice

Combine sugar, butter and honey in 1 quart saucepan. Cook over medium heat, stirring frequently, till sugar melts. Pour into 9x13 inch baking dish. Sprinkle with nuts. Top with half of bread slices and then sprinkle with ham. Combine eggs, milk and vanilla. Dip remaining bread slices in mixture on one side only. Place egg side down over ham. Pour remaining egg mixture over bread slices. Combine sugar and spice and sprinkle over top. Cover and chill 4 hours or overnight. Heat oven to 350°F. Bake uncovered, 50-55 minutes till golden brown and knife inserted in center comes out clean. Let stand 10 minutes before cutting. Serve with maple syrup.
