6 ounces softened cream cheese
1/3 cup sugar
1 egg
1 cup semi-sweet chocolate chips
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup oil
1 tablespoon vinegar
1 teaspoon vanilla extract
1/2 cup chopped almonds, optional
2 tablespoons sugar, optional
Heat oven to 350°F. Line muffin cups with paper liners. Combine cream cheese, sugar and egg and blend well. Stir in chips. Combine flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla and beat till well mixed. Fill prepared muffin cups half full. Top each with 1 tablespoon cream cheese mixture. Combine almonds and sugar and sprinkle over top of cream cheese. Bake 20-30 minutes till cheese mixture is light golden brown. Cool 15 minutes before removing to racks to cool completely. Store in refrigerator.
