1 whole chicken breast or two halves
2 tablespoons butter
2 teaspoons Italian seasoning
1 teaspoon minced or crushed garlic
1/4 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 broccoli crown, cut into bite sized bunches
1/4 cup butter
3 tablespoons flour
1/2 teaspoon garlic powder, optional
1 cup heavy whipping cream
1/4 cup grated Parmesan cheese
uncooked fettuccine for 2 people
Slice chicken into strips or bite sized chunks. Toss in seasonings, salt and pepper. Melt butter in skillet over medium-high heat. Stir in garlic and onion powder. Add chicken. Cook, stirring occasionally, till chicken is no longer pink and is browned in some places. Remove and keep warm.
Bring water to boil. Add fettuccine noodles and broccoli. Cook to al dente and drain.
Rinse with cool water to stop the cooking process. Cover and keep warm.
Melt butter in small saucepan with garlic. Stir in flour. Cook and stir till well mixed. Gradually whisk in cream. Cook and stir constantly till thickened. Whisk in cheese and cook about 3 minutes longer, stirring constantly.
To serve, toss noodles with sauce, chicken and broccoli till mixed and noodles are covered. Or, portion noodles and broccoli on plate, top with sauce, then chicken.
