Paprika Chicken Dinner Packets

Serves: 4

4 boneless skinless chicken breast halves
2 cups quartered small red potatoes
1 1/2 cups baby cut carrots, cut lengthwise in half
1 cup frozen cut green beans
1 cup chicken gravy
2 tablespoons flour
1 teaspoon paprika
1/2 teaspoon dried thyme leaves
2 tablespoons fresh snipped parsley

Prepare grill for medium heat. Cut four pieces of heavy duty foil 18x12 inches and spray with cooking spray. Place chicken breast half in center of each piece. Top with potatoes, carrots and beans. Mix gravy and flour together till well blended. Drizzle over chicken bundles. Sprinkle each with paprika and thyme. Fold foil over bundles till edges meet. Seal edges, making tight 1/2 inch fold. Fold again. Allow space on sides for heat circulation and expansion. Grill on covered grill 30-40 mintues, rotating packets 1/2 turn after 15 minutes, till chicken juices are no longer pink and vegetables are tender. Sprinkle with parsley before serving.
