1/2 cup finely chopped cooked chicken
1/4 cup chopped walnuts
2 tablespoons finely chopped water chestnuts
1 tablespoon mayonnaise
1 teaspoon soy sauce
1-2 tablespoons sour cream
2 dozen 2 inch pumpernickel bread rounds
Combine all ingredients, using as much sour cream as needed to make desired consistency. Spread each bread round with about 1 tablespoon chicken mixture.

Dry salad - could add more sour cream/mayonnaise. I also added about 1 tablespoon mustard. I made a whole cooked chicken's worth of it. Probably 1 1/4 cups chopped walnuts and a whole can of chopped water chestnuts. Soy gives an interesting flavor - definitely makes it more savory. I love the crunch in this; Denzil is not a crunchy chicken salad fan.
