1 tablespoon chopped garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons grated lime peel
4 split bone-in chicken breasts
8 sprigs cilantro
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup melted butter
1/4 cup chopped cilantro
2 tablespoons olive oil
2 tablespoons lime juice
Prepare grill for medium heat. Mash together garlic, salt and pepper to a paste with the flat side of a large knife. Add peel. Rinse chicken in cold water and pat dry with paper towels. Loosen skin by slipping hand between skin and meat. Rub 1/4 of garlic mixture between skin and meat on each breast, spreading evenly. Tuck in 2 cilantro sprigs. Sprinkle chicken with salt and pepper. Combine remaining ingredients and brush on chicken. Grill on covered grill, skin side down, 15 minutes. Turn and brush with butter. Cover and grill another 5 minutes till juices run clear and internal temperature reaches 170°F.
