4 skinless chicken breast halves
2 tablespoons oil
1 cup evaporated milk
2 tablespoons honey
1 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cloves
16 ounces sweet potatoes in syrup, drained, reserve 1/4 cup syrup
1/4 cup raisins
Heat oven to 350°F. In large skillet, heat oil to medium. Add chicken and cook about 10 minutes till lightly browned on both sides. Drain chicken on paper towels and place in 9x13 inch baking dish. In a small bowl, mix together evaporated milk, honey, salt, nutmeg and cloves. Pour over chicken. Bake for 10 minutes. Remove from oven and arrange sweet potatoes and raisins around chicken. Pour reserved 1/4 cup syrup over chicken. Return to oven and bake about 40 minutes till fork can be inserted in chicken with ease.
Nicole's Note
This just said "skinless." I don't know if that also means boneless. But 60 minutes seems a bit long maybe to cook boneless chicken. Also, the canned sweet potatoes cooking for 40 minutes may make them nothing but mush. Maybe pour syrup over and bake for 20 minutes then add sweet potatoes and raisins.
