24 ounces frozen shredded hash browns, thawed
3 tablespoons melted butter
1 cup shredded pepper jack cheese
1 cup diced cooked chicken
4 eggs
1 cup half-and-half or milk
1/2 teaspoon salt
Heat oven to 425°F. Grease 9 inch pie plate generously. Pat hash browns with paper towels to remove excess moisture. Press into prepared pie plate. Brush with butter. Bake 20-25 minutes till lightly browned. Reduce heat to 350F. Sprinkle cheese and chicken into crust. Beat together, eggs, milk and salt. Pour over chicken. Bake 20-25 minutes till knife inserted in center comes out clean. Let stand 5 minutes before cutting.
