Crust
1 1/2 cups graham cracker crumbs
3 tablespoons melted butter
3 tablespoons sugar
Filling
32 ounces softened cream cheese
3/4 cup sugar
2 lightly beaten eggs
1 teaspoon vanilla extract
2 tablespoons corn starch
1 cup sour cream
Crust
Heat oven to 400°F. Stir together all ingredients and press onto bottom and up sides of 9 inch springform pan.
Filling
Beat cream cheese and sugar together till smooth and light. Beat in eggs, vanilla and cornstarch just till thoroughly mixed. Stir in sour cream till well blended. Pour into crust and bake 45 minutes. Turn oven off. Remove cheesecake and run knife around edge of pan to loosen cake. Return to oven and prop door open slightly. Cool in oven 3 hours. Chill overnight.
