1/3 cup shortening
1/3 cup sugar
1 egg
2/3 cup honey
1 teaspoon vanilla extract
2 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
additional sugar
36 pieces chocolate kiss candy
108 chocolate chips, milk or semi-sweet
Cream together shortening and sugar. Add egg, honey and vanilla. Mix flour, baking soda and salt together; add to sugar mixture. Cover and chill dough overnight.
Heat oven to 350°F. Grease baking sheets. Roll dough into 1 1/2 inch balls. Place balls 2 inches apart on prepared sheets. Flatten balls with bottom of a glass dipped in sugar. Dip glass before flattening each ball. Bake 10 minutes. Remove from oven and leave on baking sheets. Place a kiss in about the center of each hot cookie and place 3 chocolate chips in position around the kiss to represent 2 ears and a tail. Allow to melt slightly. Remove cookies from sheets. As chocolate continues to melt, flatten the kiss into a rough circle and use a toothpick to draw the chips into points like ears and a tail. Allow to cool and set.
