Rolo Cookies

2 1/2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1 cup sugar
1 cup brown sugar
1 cup softened butter
2 teaspoons vanilla extract
2 eggs
1/2 cup chopped pecans
48 (13 ounces) Rolo Chewy Caramels in Milk Chocolate, unwrapped
1 tablespoon sugar
1/2 cup chopped pecans
4 ounces vanilla flavored candy coating, optional

Combine flour, cocoa and baking soda and mix well. Combine sugar, brown sugar and butter and beat till light and fluffy. Add vanilla and eggs and mix well. Add flour mixture and blend well. Stir in pecans. If necessary, refrigerate 30 minutes for easier handling. Heat oven to 375°F. For each cookie, with floured hands, shape about 1 tablespoon of dough around 1 Rolo candy, covering completely. Combine remaining sugar and pecans. Press one side of each ball into mixture. Place, nut side up, 2 inches apart on ungreased cookie sheets. Bake 7-10 minutes till set and slightly cracked. Cool 2 minutes and remove from sheets. Cool on rack 15 minutes till completely cooled. Melt candy coating, drizzle over cookies.
