Chocolate Covered Cherry Cookies

Makes: 4 dozen

1 1/2 cups flour
1/2 cup cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup softened butter
1 cup sugar
1 egg
1 1/2 teaspoons vanilla extract
10 ounces maraschino cherries
6 ounces semi-sweet chocolate chips
1/2 cup sweetened condensed milk

Heat oven to 350°F. Stir together flour, cocoa powder, salt, baking powder and baking soda. Beat together butter and sugar till fluffy. Add egg and vanilla. Gradually add dry ingredients to creamed mixture. Shape dough into 1 inch balls. Place on ungreased baking sheet. Press down center of dough with thumb. Drain cherries, reserving liquid. Place a cherry in center of each cookie. Melt chocolate chips and sweetened condensed milk. Stir in 4 teaspoons reserved cherry juice. Spoon about 1 teaspoon frosting over each cherry, spreading to cover cherry. Frosting may be thinned with more cherry juice if necessary. Bake for 10 minutes. Cool completely on baking sheet.
