Truffle Cookies
Prep Time: 15 minutes
Makes: 3 dozen

4 ounces unsweetened chocolate, chopped
1 cup semi-sweet chocolate chips
6 tablespoons butter
3 eggs
1 cup sugar
1 1/2 teaspoons vanilla extract
1/2 cup flour
2 tablespoons cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup semi-sweet chocolate chips

Melt chocolates and butter together stirring occasionally till smooth. Set aside to cool. Whip eggs and sugar together till thick and pale, about 2 minutes. Stir in vanilla and cooled chocolate mixture till well mixed. Combine flour, cocoa, baking powder and salt; gradually stir into chocolate mixture. Fold in chocolate chips. Cover dough and chill for at least an hour or overnight. Heat oven to 350°F. Roll dough into 1 inch balls. Place on ungreased cookie sheets 2 inches apart. Bake for 9-11 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a rack to cool completely.
