Vanilla Banana Mac-Nut Cookies

Makes: 3 1/2 dozen

1 1/2 cups sugar
1 cup softened butter
2 eggs
2 bananas, mashed
2 teaspoons vanilla extract
3 1/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cream of tartar
1 cup chopped macadamia nuts
3/4 cup vanilla sugar mixed with 1/2 teaspoon nutmeg

Cream together sugar and butter. Add eggs and mix well. Stir in bananas. Add vanilla. Combine flour, soda, salt and cream of tartar; stir to blend. Add to creamed mixture, stirring till dry ingredients are moistened. Mix in nuts. Refrigerate till chilled. Heat oven to 350°F. Line a cookie sheet with parchment paper. To keep dough chilled and more manageable to work with, set the bowl of dough in a larger bowl of ice water. Form dough into tablespoon sized balls and drop into the vanilla sugar/nutmeg mixture, turning carefully to coat evenly. Place balls about 3 inches apart on sheets and flatten slightly with the bottom of a glass that has been dipped in the vanilla sugar mixture. Bake about 8 minutes till edges start to brown. Cool on baking sheet before removing to a rack.

These turned out tasty but they spread like crazy. I chilled the dough for a long time and the balls of dough were still spreading even before they hit the oven. Maybe I didn't put in enough flour and didn't realize it. I was also out of parchment so I greased the sheets. I ended up baking in a greased 15x10 jelly roll pan as bar cookies and sprinkling with the vanilla sugar. They were very tasty. Like banana bread only sweeter.
