Sugar Cookie Blossoms

Makes: 3 1/2 dozen

1 cup sugar
1 cup softened butter
1/2 teaspoon vanilla extract
1 egg
2 1/4 cups flour
assorted colored sugars
small pastel colored melt-away mints

Heat oven to 375°F. Beat together sugar, butter and egg till smooth. Stir in flour. Shape dough into 1 inch balls. If dough is too soft to shape, cover and chill 1 hour. Roll balls in colored sugars. Place 2 inches apart onto ungreased baking sheet. With kitchen scissors or sharp knife pointing down, snip each ball in half, cutting 3/4 of the way through the dough, cut each half into 3 wedges to form petals. Bake 10-12 minutes till set. Petals should open up during baking. Cool 1 minute on sheet and remove to rack. Immediately press 1 candy, point down, in center of each cookie. Cool completely.
