Fresh Strawberry Pecan Cookies
Prep Time: 15 minutes
Makes: 4 dozen

1 1/2 cups sugar
1 cup shortening
1/2 teaspoon baking soda
2 beaten eggs
1 pint strawberries, pureed
3 cups sifted flour
1 teaspoon salt
3/4 cup chopped pecans

Heat oven to 350°F. Lightly grease or line baking sheets with parchment paper. Cream sugar and shortening together. Stir in baking soda, eggs and strawberries till just blended. Stir in flour, salt and pecans and mix well. Drop dough by rounded tablespoonfuls onto the prepared baking sheets. They will spread, so don't put them too close together. Bake 15 minutes till tops set and lightly browned.
Nicole's Note
Best the day of baking. They soak up humidity like nobody's business and get very sticky very fast. Almost impossible to stack on a plate for any length of time.
