Cream Wafers

Makes: 5 dozen

1 cup butter
1/3 cup heavy whipping cream
2 cups flour
1/2-1 teaspoon vanilla extract
1/3 cup sugar
Filling
1/4 cup softened butter
3/4 cup sifted powdered sugar
1 egg yolk, optional
1 teaspoon vanilla extract

Mix flour and butter together thoroughly. Stir in cream and mix well. Chill 1 hour. Heat oven to 375°F. Roll dough 1/8 inch thick on lightly floured board. Cut into 1 1/2 inch rounds. Transfer to waxed paper heavily sprinkled with sugar, turning to coat both sides. Place on ungreased baking sheet. Prick in 4 places with fork. Bake 7-9 minutes till slightly puffed. Put two cooled cookies together with filling. Be sure to handle the wafers with care. Wait 3 minutes after removing from the oven to remove from baking sheet.
Filling
Blend all ingredients together. If desired, tint with food coloring.
Nicole's Notes
Can also form the dough into log and wrap in waxed paper. Chill till firm. Slice log into even slices instead of cutting with cookie cutters.
