Caramel Apple Biscuits

Serves: 3

3 teaspoons softened butter
1/3 cup brown sugar
3 apple rings, peeled, cored, 1/2 inch thick
1 tablespoon sweetened dried cranberries
2 tablespoons sugar
1 tablespoon apple juice concentrate, thawed
3 frozen southern style biscuits
whipping cream or ice cream, optional

Heat oven to 375ºF. Butter bottoms and sides of three 10 ounce ramekins. Spread 1 teaspoon butter in bottom of each ramekin. Sprinkle brown sugar evenly over butter. Place apple rings in ramekins. Fill centers with cranberries. Place ramekins on jelly roll baking pan. Bake 8-10 minutes till sugar bubbles. Remove from oven. Dip all sides of frozen biscuits in juice concentrate then roll in sugar to coat. Place on top of apple rings. Sprinkle with any remaining sugar. Bake 20-25 minutes till biscuits are golden brown. To serve, turn upside down into bowls and serve with cream or ice cream.
