Hard Ganache

4 pounds dark chocolate, finely chopped
4 cups heavy whipping cream

Place chocolate in a stainless steel bowl. Bring cream just to a simmer. Pour hot cream over chocolate and allow to stand for 1 minute, stirring till chocolate is thoroughly melted. The ganache can be used immediately, or it can be covered and stored in refrigerator, then warmed prior to use.
