Honey & Spice Dressing
1 ripe medium papaya, peeled
3 tablespoons honey
1 teaspoon finely shredded lime peel
3 tablespoons lime juice
2 tablespoons oil
1/2 teaspoon chili powder
1/8 teaspoon salt
Salad
10 ounces fresh spinach, stems removed and torn
2 cups sliced strawberries
1 cup pineapple or banana chunks
1 cup sliced, peeled peaches, pears, orange sections or cantaloupe
1 cup seedless green or red grapes, halved
1 cup blueberries
1/2 cup coarsely chopped walnuts or pecans
Honey & Spice Dressing
Cut papaya in half lengthwise. Remove seeds and coarsely chop. Measure 1 1/4 cups. Process or blend together all ingredients till smooth. Cover and chill at least 30 minutes or up to 3 days.
Salad
In serving bowls, place spinach and desired fruit. Drizzle about 1/2 cup dressing over and sprinkle with nuts. Toss to coat evenly and pass remaining dressing.
