Chicken Almond Salad

4 poached chicken breasts cut in 1/2 inch cubes
1/2 cup sliced almonds
1/2 cup mayonnaise
2 teaspoons minced fresh tarragon
OR
1/2 teaspoon crumbled dried tarragon
black pepper
squeeze of lemon juice

Mix all together, using more or less mayo as desired and chill for several hours. Use on fine-textured white rolls, in puff pastry cups or on lettuce leaves for salad.
