3 egg yolks
1/4 cup water
2 tablespoons lemon juice
1/2 cup cold butter (no substitutes)
1/8 teaspoon salt
1/8 teaspoon paprika
dash black pepper
In small saucepan, whisk together egg, water and lemon juice. Cook and stir over low heat till mixture bubbles around edges and reaches 160F, about 20 minutes. Cut cold butter into 8 pieces and add to yolk mixture one at a time, whisking after each addition till melted. Stir in salt, paprika and pepper and serve immediately.
