1/4 cup finely chopped pecans
6 ounces softened cream cheese
2 tablespoons frozen orange juice concentrate, thawed
1/4 teaspoon cinnamon
1 cup shredded carrots
1/4 cup raisins
toasted party pumpernickel bread or melba toast rounds
Heat oven to 350°F. Toast pecans 6-8 minutes, stirring occasionally. Cool slightly. Combine cream cheese, juice and cinnamon till well blended. Stir in carrots, pecans and raisins. Serve spread with bread or toast rounds.
