Coconut Cherry Scones

Makes: 8

2 cups flour
1/4 cup sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup cold butter
1 beaten egg
1/2 cup half-and-half
1/3 cup sweetened flaked coconut
1/2 cup dried cherries or cranberries, chopped
1 teaspoon grated lemon peel
1 tablespoon coarse sugar

Heat oven to 375°F. Grease baking sheet. Combine dry ingredients. Cut in butter till mixture resembles coarse crumbs. Combine egg, half-and-half, coconut, cherries and peel. Add to dry mixture. Stir just till moistened. Turn out onto lightly floured surface. Knead lightly 8-10 times. Pat into 7 inch circle. Place on prepared sheet. Cut into 8 wedges. Do not separate wedges. Sprinkle with sugar. Bake 20-25 minutes till golden brown. Cool 15 minutes, cut wedges apart and serve warm.
