1 egg white
1/3 cup canola oil
2/3 cup Splenda granulated
1/2 cup buttermilk
1/2 teaspoon almond extract
1/3 cup nonfat instant dry milk
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups flour
1 cup chopped dried cherries
2 tablespoons sugar, optional
Heat oven to 350ºF. Spray baking sheet with nonstick cooking spray. Blend egg and white together. Add oil, Splenda, buttermilk, extract and milk and stir. Mix dry ingredients together and stir into egg mixture. Add cherries and stir. Mound 12 spoonfuls of batter on prepared sheet. Lightly sprinkle with sugar if desired. Bake 10-15 minutes.
