6 tablespoons butter or oil
1 small chopped onion
3/8 teaspoon salt
3/4 teaspoon turmeric
3/4 teaspoon paprika
3/8 teaspoon cardamom
3/8 teaspoon curry powder
4 cups couscous
5 1/4 cups water
3/4 cup soy sauce or tamari soy sauce
2 1/4 cups frozen sweet peas, thawed
6 tablespoons chopped celery
4 tablespoons chopped parsley
Saute onion in butter or oil or combination of both, add other vegetables and turn off heat. Add a little butter to water in a separate pot, boil and add couscous. Cover and cook for 3 minutes. Stir in vegetables, raisins and parsley. Turn off heat and let sit 5 minutes for fast cooking and 10-15 minutes for regular. Fluff and serve immediately.
