1 teaspoon thyme, crushed
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
3 large yellow or russet potatoes
1 sliced onion
2 tablespoons olive oil
1/4 cup sour cream
1 tablespoon fresh snipped chives
Prepare grill for medium heat. Combine spices. Fold 36x18 inch piece of foil in half to make double thickness of 18x18 inch foil. Cut potatoes crosswise into 1/4 inch thick slices. Place with onions in center of foil. Drizzle with oil and sprinkle with spices. Bring 2 opposite edges of foil together and seal with a double fold. Fold remaining edges in to seal completely, leaving space for steam to build. Grill 20-25 minutes till potatoes are tender. Serve with sour cream and chives.
