Crispy Mashed Potato Pancake

Serves: 4

3 cups cold mashed potatoes (prepared with milk and butter)
1 lightly beaten egg
1 teaspoon Italian seasoning
1/8 teaspoon garlic powder
1 tablespoon olive oil


Combine all but oil and mix well. In small skillet, heat oil over medium-high heat. Add potato mixture and press with spatula to flatten evenly. Cover and cook 8 minutes till bottom is crispy. Invert onto serving plate.
