Smoky Mashed Potatoes

Serves: 24

5 pounds mashed potatoes, prepared with milk, butter, salt and pepper to desired consistency and flavor
8 ounces smoked Gouda cheese, shredded
3-4 ounce package prosciutto or sliced deli ham, chopped
3 minced cloves garlic
2 chipotle peppers in adobo sauce, finely chopped

Heat oven to 350°F. Combine all ingredients. Spoon into 3-4 quart casserole. Cover and bake 45-55 minutes till heated through, stirring once.
