1/2 cup Dijon mustard
2 tablespoons olive oil
1 minced garlic clove
1/2 teaspoon Italian seasoning
6 medium (2 pounds) red potatoes, cleaned and cut into chunks
Heat oven to 425°F. Grease 9x13 inch baking pan. Mix all ingredients together except potatoes. Place potatoes in prepared pan and pour mustard mixture over. Toss to coat. Bake 35-40 minutes till potatoes are fork tender, stirring occasionally.
