6 ounces long grain and wild rice mix
if there is a seasoning packet w/ mix, use half
8 ounces Velveeta cheese
3 ounces softened cream cheese
1 can evaporated milk
3-4 cups milk
4 medium potatoes, peeled and grated
3 tablespoons bacon bits or crumbled bacon
salt and pepper to taste
Grate potatoes. Stir them into a large pot with rice, bacon and seasonings. Cube Velveeta and cream cheese and add. Add evaporated milk and, using empty can, add 3 cans of water. Add milk. It may look very thin, but after it cooks, it thickens up considerably. Cook on a low temperature, uncovered, till potatoes are not crunchy. You can leave this simmering for a couple of hours or it works in a crockpot on low for 4-6 hours. This is a good way to make it overnight or first thing in the morning for dinner that night.
If stove top method is used, be sure to stir frequently till cheeses are melted.
