1/4 cup finely chopped onion
3 finely chopped celery stalks
1/2 cup finely chopped baby carrots
1 1/2 teaspoons kosher salt
6 tablespoons butter
6 tablespoons flour
1/2 teaspoon black pepper
1 teaspoon minced garlic
1/2 teaspoon dried thyme leaves
1/4 cup heavy whipping cream
2 1/4 cups milk
4 cups cooked diced turkey
15 ounces chicken broth
Saute onion, celery, carrot and salt in butter 10 minutes till softened. Stir in seasonings and flour till mixed. Mixture will clump together quickly. Stir in cream and 1/4 cup milk till smooth. Add remaining milk 1/2 cup at a time, stirring till smooth. Cook till thickened. Add turkey and broth and stir till well mixed and smooth. Add more milk if broth is too thick. Cover and simmer 25-30 minutes till all vegetables are tender.
