Chicken & Spinach Tortellini Soup

Serves: 5

1 tablespoon olive oil
1 tablespoon chopped green onion
1/3 cup julienne carrot strips
1 teaspoon finely chopped garlic
6 cups chicken broth
2 cups shredded cooked chicken
1 cup small frozen cheese filled tortellini
1/8 teaspoon black pepper
3 cups chopped fresh spinach

Heat oil in Dutch oven over medium-high heat. Cook onions, carrots and garlic in oil 3-4 minutes, stirring frequently, till onions are softened. Stir in broth and chicken and heat to boiling. Stir in tortellini and reduce heat to medium. Cover and cook 3-5 minutes till tortellini are tender. Stir in pepper and spinach. Cover and cook 2-3 minutes till spinach is hot.
